This dressing was invented for the Alt-Slaw, but would be good on other salads too, so I am posting it separately:
1/3 cup cider vinegar
2 Tbs tahini paste
2 Tbs peanut butter (preferably smooth, unsweetened, natural, but any will work)
1 Tbs dark sesame oil
1 Tbs soy sauce or tamari
1 Tbs sugar (preferably unrefined, adjust down to taste if using sweetened peanut butter)
Mix with fork in jar, then shake vigorously to blend fully.
