Vegan Gluten-Free Oatmeal Peanut-Butter Chocolate Chip Cookies

I set out on a mission to make vegan cookies. Peanut butter and chocolate seemed like a safe direction, and I thought some oatmeal would both help hold things together and provide a nutritional boost. I did not imagine they would be quite so delicious, and they ended up being gluten-free, to boot!

Vegan Gluten-Free Oatmeal Peanut-Butter Chocolate Chip Cookies

Delicious, wholesome, vegan, gluten-free cookies


Ingredients

– 1/2 cup peanuts (chopped, if mixing by hand)
– 1/2-1 cup Demerara (or brown) sugar (I used 3/4)
– 1 cup natural, unsweetened peanut butter
– 1 cup rolled oats
– 1/2 cup chick pea flour (or other flour)
– 1/2 tsp baking soda
– 1/4 tsp salt
– 1 tsp vanilla
– 1 tsp cinnamon
– 2-3 tbs soy milk (or other milk
– 1 cup dark chocolate chips

Directions


1. Preheat oven to 350°F/175°C
2. Chop peanuts into small bits in food processor, or by hand
3. In food processor, or in a mixing bowl, add all other ingredients, except soy milk and chocolate chips
4. Add soy (or other) milk, one tablespoon at a time, until batter holds together when balled
5. Mix in chocolate chips
6. Shape into teaspoon-sized balls, flatten slightly, and place on greased or parchment paper-covered baking sheet
7. Bake 8-10 minutes, until just slightly browned
8. Let cool, and enjoy!
