Avocado Curry Salad

Fresh and spicy, this salad takes just minutes to toss together, and makes a wonderful light lunch, or a surprising and refreshing side dish.

Ingredients:

  • 1 ripe avocado, cut into medium chunks
  • Handful of cherry tomatoes, halved
  • 5-10 mushrooms, halved or quartered (depending on size)
  • 1/4-1/3 cup red onion, diced
  • 1 hot pepper, sliced (optional)
  • 1 small bunch fresh cilantro, chopped
  • 1/2 lime (or lemon)
  • olive oil
  • curry powder
  • salt

Instructions:

  1. Mix together all the vegetables
  2. Add a generous swirl of olive oil, the juice of half the lime (or lemon), a few generous dashes of your favorite curry powder, and a pinch of salt
  3. Toss gently (so as not to smush the avocado), and serve immediately
  4. Enjoy!
